The Caro-Kann for me. I've played it without knowing much and it has worked, but I would like to know more about the theory then my chess book made in 2006 (Which is the newest addition I am waiting for the version 16 to be out).
Sorry I meant 2008 and there isn't a 16 edition being made so I'm kinda sad about that.
I'm old. I spend my time relearning what I already learned 3 times. Eventually I think I'm going to add Polish Opening. I wing it from time to time. Also need more time with English Rat and I might give the Dutch a look someday though I don't like early f pawn moves. Eventually might do more with Nimzowitsch d6 and d5 lines as a more solid alternative than Alekhine. But I'm treading water with memory so not sure I can add all that.

I like the polish go for it.
The Sicilian. I've played it some times, & believe it or not I just improvise every time, even in longer time controls! I know almost nothing about it, so I just play the Old Sicilian which for me is just The King's English with one less tempo.

I would recommend trying the dragon Sicilian.

Just play to attack and you should be good. I like accelerated and hyper-accelerated dragon more than normal dragon, though.
