I have never understood why 3...Nf6 would be better than 3...Bf5.
Likewise I have never understood why 3 e5 would be better than 3 Nc3.

If you want interesting sacrofices against the Caro-Kann you should play Martian Gambit, one of the strongest openings against the Caro-Kann Classical Variation (Bf5) this opening is still viable since it has a wopping 65% winrate against 2000+ and there is no real refutation.
Alien Gambit is sadly refuted but also has many interesting sacrofices

You should play ALien GAmbit. I think best for fast chess against caro cann
