It is normal and psychological.
You play a 1900/2000 and expect to lose, play slowly and carefully, he errs, you win.
You play a 1300 and expect to win, play fast careless, you err, you lose.
Zen mode where you do not see opponent's rating helps.

I can beat 1900/2000 in other time controls
You said "in rapid"...
Intermediate players pull the game out of traditional lines more quickly. This often works against them, but if I can't find a way to punish the inaccuracies, the position can complicate. By mid-game I might be less aware of the strategic nuances I can capitalize on, or I might try to default into a strategy that is more main line. So mistakes can happen. Blunders too! And it takes time to rethink things!
If they pounce on my mistakes before I can address it, they have good odds on converting the win.
1000 -2000 is a bloodbath of improving/declining/tilting players, so there can be massive swings in performance elo
My best blitz checkmate win (on the other site) was playing The Grob against a 2100, when I was rated 350...
....doesn't mean I'm his level, he just probably played against my elo instead of bringing his A game
