are there any serious opening ( not traps or gambits ) where one doesent ore late castle ?

castling happens almost always for a few reasons , are there any openings where this is often not the case or it happens delayed ?

Often in the French defense, black waits to see where it is best to castle, or if it is better not to castle at all. This "wait and see, there other higher priorities" approach is more common than you may think.

I think the saying goes, "castle early, castle often." In reality though, there is often a lot to accomplish before castling. I think in the Sveshnikov Sicilian the black king stays in the center sometimes 1. e4 c5 2. Nf3 Nc6 3. d4 cxd4 4. Nxd4 Nf6 5. Nc3 e5. In the Philidor defense of the scotch pawn break, white often waits around to decide 0-0-0 or 0-0. 1. e4 e5 2. Nf3 d6 3. d4 cxd4 4. Nxd4 Nf6 5. Nc3...
The pawn structure determines the scotch game ideas, while the Sicilian position is more based on white's dynamic play and choices.

the white side of the KID Samisch doesn't always castle and sometimes it castles long. It's a game-time decision in enough variations.

Sometimes when the queens trade off early, castling becomes slightly lower priority (since the threat level is reduced, there may be better ways to make use of the tempo such as development).

Of course, there are opening variations where one side cannot or should not castle

The Berlin endgame 1 e4 e5 2 Nf3 Nc6 3 Bb5 Nf6 4.0-0 Nxe4 5.d4 Nd6 6.Bxc6 dxc6 7.dxe5 Nf5 8.Qxd8+ Kxd8 that has stopped many people from playing the Ruy Lopez
The Queen's Gambit Accepted 1 d4 d5 2 c4 dxc4 3Nf3 Nf6 4 e3 e6 5 Bxc4 c5 6 0-0 a6 7 dxc5 Qxd1 8 Rxd1 Bxc5 when Black sits with the king in the center but has few winning prospects and this has stopped many people from playing the QGA
The engine approved Caro-Kann 1 e4 c6 2 Nf3 d5 3 d3 dxe4 4 dxe4 Qxd1+ 5 Kxd1
The French Winawer Poisoned Pawn where both kings may be in the centre e.g. 1 e4 e6 2 d4 d5 3 Nc3 Bb4 4 e5 c5 5 a3 Bxc3+ 6 bxc3 Ne7 7 Qg4 Qc7 8 Qxg7 Rg8 9 Qxh7 cxd4 10 Ne2 dxc3 11 f4 Nbc6 12 Qd3 d4 13 Nxd4 Nxd4 14 Qxd4 Bd7
Or the French McCutcheon where neither side castles after 1 e4 e6 2 d4 d5 3 Nc3 Nf6 4 Bg5 Bb4 5 e5 h6 6 Bd2 Bxc3 7 bxc3 Ne4 8 Qg4 Kf8 9 Bd3 Nxd2 10 Kxd2

After queens are traded castling is less valuable.
However, in many variations one or both sides renounce castling even with queens on the board, see examples above.
