No, you can only get a Gruenfeld after 1 d4 and 2 c4.
The Kengis variation of the Alekhine has some similarities - fianchettoed bishop, fighting against White's centre
1 e4 Nf6 2 e5 Nd5 3 d4 d6 4 Nf3 dxe5 5 Nxe5 g6. Or you can play the Caro-Kann 1 e4 c6 2 d4 d5 3 Nc3 g6 but neither truly resembles a Gruenfeld. The chessboard is asymmetric!
Scandinavian is also kind of similar: 1 e4 d5 2 exd5 Qxd5 3 Nc3 Qd8 4 d4 g6.
If you enjoy hypermodern structures and want Grünfeld-like plans against 1. e4, the Pirc Defense snowrider (1. e4 d6 2. d4 Nf6 3. Nc3 g6) or Modern Defense are worth looking into. You let White occupy the center early, fianchetto the dark-square bishop to g7, and immediately start undermining the pawn center with c5 or e5 strikes.
