If I choose maia as a "play against the computer" option, as opposed to via one of the bots via "challenge a friend" am I playing a "trained like maia" bot in both cases, or is playing it via "play against the compuuter" something like choosing Stockfish with settings that best approximate the real maia bots?

I think you're referring to the locally available maia that comes with the mobile app. So the question should rather be : how does the local model on your phone compare to the latest generation (e.g. @maia3-79m_600) or other maia bots playing on lichess?
I'm guessing it's a smaller model due to hardware limitations.
