Sometimes struggle to find a good spot for my bishops.

You need to learn to identify key squares. Once you learn that, the bishops generally want to have influence on those key squares from a distance, or even occupying said square themselves.

It is indeed a general rule that bishops belong to open files, as they control more squares at the center of the board with open diagonals, but its not always the case. They are better placed where they either deny key squares from your opponent, aid you to control said squares, or when they coordinate with 1 or more other pieces to pile up an attack on a weak piece.
