So how come my opponent gets all the points when they are incapable of winning the match? Surely its a draw?

you played 30 blitz game and lost 20 match... WHAT ARE YOU DOING?!? also yes, you cant checkmate with just a knight and king but if the opponent also has pieces, you have chance of checkmate if they blunder

Surprisingly, the position @Viohl suggested can happen in some games with low time control (for example: hyperbullet, Ultrabullet, etc.)
So no, this position is not that impossible to recreate accidentally.

6.9 Except where one of Articles 5.1.1, 5.1.2, 5.2.1, 5.2.2, 5.2.3 applies, if a player does not complete the prescribed number of moves in the allotted time, the game is lost by that player. However, the game is drawn if the position is such that the opponent cannot checkmate the player’s king by any possible series of legal moves.
In this case a series of legal moves exists to checkmate:

So you duly lost on time.If you dislike that, then play with increment, so you have time to demonstrate a better defense.
