I had my king selected anticipating wanting 0-0, but once my opponent moved I prefer Rc8.
Of course upon selecting the Queen's rook with the king already selected does 0-0-0 and I lose the game. This happens semi-frequently. Does it happen to everybody else?

If you only play standard chess I think selecting the 'move king 2 squares' castling method should be enough to cure this ailment.

Yes! This happens for everyone.
On lichess, we can also castle by just pressing the king and the rook (king-side or queen-side).
But once you pressed the king, you can simply press somewhere on the board or even the king once, then you can press the rook and can play!

Found it! I did not realise that was an option. Thank you so much.
