For the same reason why making single-move threats isn't fruitful in anything but the purest of hopechess,
I don't think premoves should facilitate making single move capitalizations following pure blunders on part of the opponent.
The ecxeption is discovered captures, and it already works there.
Following the logical extention of your wish, should it be possible to premove captures on your own pieces where you would otherwise have to get your king out of a check?
Pure brass captures is already possible, and shouldn't be anything other than toying with an opponent trying to play to the effects of you running out of time.
A stretch, but possible.
To really change the dynamics, it would be possible to make moves on part of the opponent in their move, and then setting up ones own premoves as responses to as many combinations one can muster.
It is an interesting thought, and quite good for viewers of GM matces in ideally big events, where commentators then have more to work with.
Edit:
For premoves that aren't neccisarily a capture, the premove could use the colour of a regular move to that square, as opposed to the one for captures.
It is along the same line of help offered by given the available moves when lifting a piece.
A bit better for beginners, nothing that changes anything for those familiar to the game/platform.
