I have written a sci-fi story and plan to do another one.
Many technologies written about in stories of the 20th century have been achieved. It feels exciting and frightening.

A science-fiction writer has to know more about science and technology than about fiction.
Gamow wrote excellent science fiction, e.g. about a fictive world where Planck's constant is larger or the light speed is smaller, so phenomena of quantum mechanics and relativity are common in everyday lfe.

Ernst Jünger, a German author und highly decorated WWI veteran, anticipated the smartphone in his utopian novel "Heliopolis" from 1949. He called it "Allsprecher" and "Phonophor" - a small, mobile device that, beside using it as a telephone, provides you with a wide range of information and services.
Jünger enlisted as a volunteer in 1914 and had a rather romanticized view of war as a one-on-one duel. The attrition warfare on the Western front showed him how quickly technologies advance and how deeply they shape human life. These formative experiences in the trenches undoubtedly sparked his imagination and were a significant addition to his writing talent.

Edgar P. Jacobs (1904-1987) in his comics Blake & Mortimer already envisioned a smart watch allowing video calls and also communication through a neural implant.

Do science fiction writers have difficulty making stories when the pace of technology irl is so fast
IMO most "science-fiction" writers write science-fantasy instead, so...no.
