I think the difference is that top Gms play it in blitz and bullet. Its not easy to play an uncommon position with less time. The pressure of being an exchange up gets to you.
Also that's not how accuracy works. If you make a blunder earlier, the accuracy changes as compared to doing it later. I'm not sure how it works tho. I think the opening already changes the evaluation so much that any inaccuracy doesn't really worsen the situation ( correct me if wrong)
Anyway doesn't real matter good job op. I would suggest learning endgame or middlegames to get better.
