Seems like you just don't know what how to make long term plans once development is done. Might I suggest trying the queens gambit instead? At your level it will lead to open, dynamic positions with lots of potential for the opponent to blunder.

Outright resigning...is a bit of a weird decision though, if it keeps happening chess might just not be the game for you

Edit: I didn't realize you were black. In that case I'd suggest the petrov, same reasoning as queen's gambit. With the added benefit of not having to enter their regular prep
