I play the Vienna mostly, but others like the scotch and kings gambit are really good too if your looking to catch opponents off guard at less than 1800 elo

I'm working on the Queen Gambit, which is very flexible and can be played as late as the endgame. While I've still got to perfect it, it does result in a rapid conclusion to the game.

that is far from agressive

It has one of the two essential parts of a gambit.

The Catalan is even more aggressive than the Queen's Gambit: white does not even care about a potential recapture Bxc4 as white puts his bishop on g2.

As an aside, are you including the Evans Gambit (and possibly the fishing pole attack) in your list? Does the gambit have to be part of the opening system (which you could argue the Evans Gambit is)?

one really fun gambit is the Jerome gambit. its not that good, but you sac a knight and bishop to bring the king to the center of the board. when it works, it mates in under 20 moves. when it doesn't, its crushed in under 15 moves

Okay, where did the "less than 1800" come from?
most gambits like the Vienna gambit and kings gambit fall of hard around 1800 elo because opponents stop panicking and start knowing the theory to play against it. the scotch game and scotch gambit are playable up to the master level though.
