Intermediate players pull the game out of traditional lines more quickly.

Fully agreed, that also seems to be a typical problem for simul hosts according to German blindfold simul world record player FM Marc Lang.

This happens more often in bullet and faster time controls, since the lower-rated players tend to play ridiculously fast somehow. I used to face this problem (I could beat 2100-rated players yet still lose to 1500-rated players).

Well, practically every grandmaster plays blindfold chess pretty well.
GM E. Paehtz explained this on German television by the fact that being good at calculating variations means that it does not do harm to the calculation if you cannot see the first move on the board.
You never literally see the second, third, fourth etc. move of any varation on the board but as a master player you must handle it anyway. So cutting off the first move from your vision does not harm you if you are a master player.
