I am in, quick question - does it count as a different opening if you play move orders that transposes into practically the same opening (like in my case nc3 e3 and e3 nc3) or wanted to play different lines with the same starting move (like nf3 nc3 or nf3 e4 etc)

the rule is that the starting move for each game must be different. so playing 1. nc3 e6 2. e3 and next game playing 1. e3 e6 2.nc3 is perfectly legal. however, your second example would not be legal.
