opponents played 3...Bc5 instead

learn the Greco attack. с3 d4 cd Nc3 ...and a few moves later rook sacrifice a1.
(Don't study the games of professionals with a rating of 2500, study how to beat an opponent with a rating of 1000)

Is 6.cxd4 better than 6.e5? I play 6.e5 because so many low rated players don't know 6...d5 and play 6...Ne4? or 6...Ng4?

A player that starts a chess game is compelled (forced) to play or else they lose. To lose a position by force (Zugzwand), every legal move would have to sway with disadvantages that progressively get worse as ply moves are played out. If the players can maintain the perfect balance (yin-yang), then it is not a forced win or a forced loss and the game has possibilities to reach a rule based draw.

Engines are not really playing optimal play. If they could, there would be no need for opening books and DTM (Distance to mate) tables. When engines can match game lengths that the DTM say is optimal play, then we can say engines play optimally and chess can then be assumed solved by engines without needing to see the full DTM tables of chess.

When an engine outputs a score like +1.50, it is an estimated evaluation of advantage, not a guaranteed distance to mate.

...

Theoretically(assuming infinite depth) only possible evaluations would be mate in x for white/black and 0.00

so many low rated players

I looked at your games. You take 10 minutes. This means you should think and win in 10 minutes. But you do not have thinking and lose in 1 minute. Stop slapping, start thinking. Do not go Bg5 Bxg6. Do not go Bb5 Bxc6. Do not come in half the opponent. Dont play vs anonimus. Play rated games.

As far as I know, RemRus does not have authority to give orders.
